Artichokes au Gratin

  • Oven 350°
  • Cook artichokes according to package directions; drain. Combine Parmesan cheese, dry bread crumbs, and paprika; stir in the 1 teaspoon softened margarine or butter. Set aside.
  • For sauce, in a medium saucepan cook mushrooms in the 1 tbsp margarine over medium-high heat about 3 minutes or till almost tender. Stir in flour, mustard, marjoram, 1/8 teaspoon salt, and dash pepper. Add milk all at once. Cook and stir till bubbly. Cook and stir 1 minute more. Stir in artichoke hearts. Transfer to a 1-quart casserole. Sprinkle crumb mixture over vegetables. Bake in a 350° oven about 20 minutes or till bubbly.
  • Microwave directions:
  • Cook artichokes according to package microwave directions. Prepare crumb mixture as above. For sauce, in a 1-quart casserole micro-cook mushrooms and the 1 tbsp margarine, covered, on 100% power (high) 1-1/2 to 2 minutes or till almost tender; stir once. Add flour, mustard, marjoram, 1/8 teaspoon salt, and dash pepper. Stir in milk. Cook, uncovered, on high 2-1/2 to 3-1/2 minutes or till bubbly; stir every 30 seconds. Stir in artichokes. Cook on high 1 minute more or till heated through. Sprinkle with crumb mixture.
