Turkey And Rice Salad

  • In a medium saucepan, combine the wild rice, broth, and water. Bring the liquid to a boil, reduce the heat, cover the pan, and simmer the rice for 15 minutes.
  • Add the long-grain white rice to the wild rice, cover the pan, and continue cooking the rice for another 20 to 25 minutes or until all the liquid is absorbed. Chill the rice.
  • Combine all the salad ingredients-rice, turkey, and vegetables.
  • In a small bowl or jar, combine all the dressing ingredients, and mix them well. Just before serving, add the dressing to the salad, and toss the ingredients to combine them. Garnish the salad with mandarin oranges, if desired.
