Zucchini-Crust Pizza

TO PREPARE THE CRUST
Place the grated zucchini in a kitchen cloth or several thicknesses of cheesecloth, and squeeze out all the moisture you can (you should be able to reduce the amount by about half).
In a large bowl, combine the squeezed zucchini with all the remaining crust ingredients. Press the mixture on the bottom and sides of a greased 12- or 13-inch pan with a shallow rim.
Bake the crust in a preheated 350° oven for 25 to 30 minutes or until the crust is firm. Remove the crust from the oven.
TO ASSEMBLE THE PIZZA
Sprinkle the chicken, pepper, and olives evenly over the surface of the prebaked crust. Spoon the tomato sauce over all, spreading it evenly with the back of a spoon.
Sprinkle the sauce with the grated cheese and oregano.
Bake the pizza in a preheated 350° oven for 25 to 30 minutes.
