Zucchini-Crust Pizza

  • TO PREPARE THE CRUST
  • Place the grated zucchini in a kitchen cloth or several thicknesses of cheesecloth, and squeeze out all the moisture you can (you should be able to reduce the amount by about half).
  • In a large bowl, combine the squeezed zucchini with all the remaining crust ingredients. Press the mixture on the bottom and sides of a greased 12- or 13-inch pan with a shallow rim.
  • Bake the crust in a preheated 350° oven for 25 to 30 minutes or until the crust is firm. Remove the crust from the oven.
  • TO ASSEMBLE THE PIZZA
  • Sprinkle the chicken, pepper, and olives evenly over the surface of the prebaked crust. Spoon the tomato sauce over all, spreading it evenly with the back of a spoon.
  • Sprinkle the sauce with the grated cheese and oregano.
  • Bake the pizza in a preheated 350° oven for 25 to 30 minutes.
