Roast Peppered Rib Eye of Beef

  • Rub the black pepper over the roast and press in with heel of hand. Place the roast in a shallow baking pan. In a jar with a tight-fitting lid, combine the remaining ingredients and shake well. Carefully pour the mixture over the roast and marinate overnight in the refrigerator.
  • Preheat oven to 325° F. Remove the roast from the marinade and bake for 17 to 20 minutes per lb for rare. (For the best results, use a meat thermometer.) Let cool slightly. Slice and serve immediately.
