Buttermilk Bran Muffins

DIRECTIONS

  • Preheat oven to 350°F. Cream the margarine and sugar together thoroughly in a large bowl. Add the eggs, and cream well again.
  • Sift the flour. Add the flour to the egg mixture, alternating with the buttermilk, mixing well after each addition.
  • Dissolve the baking soda in hot water. Add it to the batter, and mix well. Then add bran flakes and all-bran. The batter will be rather thin. Allow it to sit covered in the refrigerator overnight.
  • Grease eighteen muffin cups.
  • Just before baking, add the carrots and raisins to the batter. Pour the batter into the prepared muffin cups, and bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool for 10 minutes before removing them from the cups.
