Buttermilk Bran Muffins

DIRECTIONS
Preheat oven to 350°F. Cream the margarine and sugar together thoroughly in a large bowl. Add the eggs, and cream well again.
Sift the flour. Add the flour to the egg mixture, alternating with the buttermilk, mixing well after each addition.
Dissolve the baking soda in hot water. Add it to the batter, and mix well. Then add bran flakes and all-bran. The batter will be rather thin. Allow it to sit covered in the refrigerator overnight.
Grease eighteen muffin cups.
Just before baking, add the carrots and raisins to the batter. Pour the batter into the prepared muffin cups, and bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool for 10 minutes before removing them from the cups.
