  • Soak the chilies in stock to cover until soft, about 15 minutes.
  • Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until soft. Place the chilies with the plumping liquid in a blender or food processor. Add the onion mixture and puree.
  • The sauce should be thick and smooth. Pour additional liquid into the food processor while the motor is running if the sauce is too thick. Season with salt. Pour the sauce into a saucepan and keep warm.
