DIRECTIONS

  • Preheat the oven to 325°. Grease one loaf pan.
  • Dice the apricots into 1/4-in pieces. Combine the apricots and the orange juice in a small saucepan, and cook over moderately low heat until the mixture comes to a boil. Continue cooking 5 minutes. Then remove the pan from the heat, and allow the mixture to cool.
  • In a large bowl, cream together the butter and sugar. Add the egg and milk, and mix until well blended. Stir in the bran, orange peel, apricot mixture, and nuts, mixing well.
  • Sift the flour, baking powder, baking soda, and salt together. Add the dry ingredients to the apricot mixture, and stir until thoroughly moistened.
  • Pour the batter into the prepared pan, and bake at 325° for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
