Pina Colada Muffins

INGREDIENTS

1 box yellow cake mix
1 teaspoon coconut extract
1 tsp pure rum extract
1 cup flaked coconut
½ to 1 cup chopped nuts
8 oz crushed pineapple with liquid

Pina Colada Muffins

DIRECTIONS

Preheat oven to 350° F. Prepare the cake batter according to package directions. Add the remaining ingredients to the batter and mix for 1 minute. (Do not overmix.)
Fill greased muffin cups 3/4 full and bake for 15 to 20 minutes or until golden. Let cool on wire racks. Serve.
