DIRECTIONS

  • Brown the roast in a large Dutch oven, using a bit of rendered pork fat. When nicely browned on all sides, remove the meat and set it aside. Pour off all but about 2 tablespoons of the fat and discard. Put the chopped onions, garlic, mustard seeds, cinnamon, and nutmeg in the same pan. Cook over low heat until the onions are soft. Push the onions to the side of the pot and return the roast.
  • Sprinkle on the salt and pepper and pour in the chicken broth. Top with the grated orange peel, cover, and simmer on top of the stove over low heat for approximately 2 hours, or until the meat is tender. Baste occasionally with pan juices. About 30 minutes before the roast is done, add the potatoes, boiling onions, and celery.
  • Remove the roast and vegetables to a warm serving platter. Reduce the pan juices over high heat to about 1 cup. Skim off the fat. Stir the cornstarch mixture into the pan juices and heat to thicken. Garnish with orange slices and chopped parsley.
