Sauteed Pork Tenderloin

DIRECTIONS
Slice the tenderloins into uniform slices as described above. Toss the flour, salt, and pepper together in a small brown paper bag. Add the tenderloin slices and shake to coat them with the seasoned flour.
Heat the butter and oil together in a sauté pan and quickly brown the tenderloin pieces a few at a time, 2 to 3 minutes on each side. Remove them to a warm serving platter; keep warm.
Pour the stock, wine, or stock-and-wine mixture into the pan, scraping the little bits of meat and browned flour from the bottom of the pan with a wooden spoon. Bring the liquid to a boil and keep boiling until it reduces by about half and thickens slightly. Pour over the sautéed tenderloin slices and serve.
