Pork Loin With Cranberry-Rosemary Sauce


Use your leftover cranberry sauce for this unique and tangy accompaniment to roast pork. Serve with leftover stuffing, mashed potatoes or a fresh batch of rice pilaf.

DIRECTIONS

  • Preheat oven to 450° F.
  • Heat 1 tablespoon of the oil in a large skillet on medium-high. Sprinkle the pork with salt and pepper and place in the skillet. Sear on all sides until browned.
  • Place pork on a foil-lined baking sheet or roasting pan and roast in the oven for about 10-15 minutes, until inside temperature is about 155° F.
  • In the meantime, heat the remaining oil in the same skillet on medium. Add shallots and rosemary and sauté until shallots are softened, about 3 minutes.
  • Add broth, cranberry sauce and vinegar, and stir for about 2 minutes.
  • Remove pork from oven and place on platter. Spoon sauce over pork.
