Beet and Clementine Party Salad
Get a head start on this tasty salad by roasting the beets in the morning. Toss the rest of the ingredients together an hour or two in advance so the flavors blend.

DIRECTIONS
Preheat oven to 400° F.
Wash beets and rub lightly with olive oil. Wrap in foil and roast for 50 minutes or until tender to the touch. Cool; peel and cut each into 8 wedges. Place in medium glass salad bowl.
Add clementines, fennel and onion.
In a small bowl whisk together olive oil, vinegar, mustard, salt and pepper. Drizzle over vegetables.
Toss gently to blend. Serve in individual salad bowls and garnish each with Parmesan shavings.
