Fried Egg Spaghetti

DIRECTIONS
Bring a pot of salted water to boil. Cook pasta according to package directions; drain and return to pot; cover to keep warm
Meanwhile, heat oil in a medium skillet over medium heat. Add garlic and then eggs. Cook eggs just until whites are done but yolks are still runny, about 1-2 minutes. Pour eggs and garlic-oil mixture into the pot of spaghetti and toss together, breaking up the eggs so the yolks and oil combine to form a creamy sauce. Season with salt and pepper to taste and serve immediately; top with grated parmesan, chopped parsley and crumbled bacon if desired.
Company’s Coming Tip: To serve this dish for guests, divide noodles into individual bowls; top each with a fried egg and a little oil, and instruct guests to toss the egg in and season to taste. Serve with fresh spinach leaves drizzled with fresh-squeezed lemon juice.
