Classic Vinaigrette

DIRECTIONS
Combine vinegar, mustard, salt and canola oil in a jar with a tight-fitting lid. Close jar tightly; shake vigorously. Keeps refrigerated for 2 weeks.
1. Honey-Basil Vinaigrette: Follow master recipe using white wine vinegar. Delete mustard; add 1 tablespoon honey and 2 tablespoons finely chopped fresh basil leaves.
2. Chile-Lime Vinaigrette: Follow master recipe, using freshly squeezed lime juice instead of vinegar. Delete mustard; add 2 teaspoons minced jalapeños.
3. Balsamic Vinaigrette: Follow master recipe, using balsamic vinegar. Add one clove minced garlic.
4. Greek Olive Vinaigrette: Follow master recipe, using freshly squeezed lemon juice instead of vinegar. Add 2 tablespoons finely chopped kalamata olives, 1 teaspoon Greek seasoning and 2 tablespoons finely crumbled feta cheese.
5. Berry Vinaigrette: Follow master recipe, using white wine vinegar. Add 1 heaping tablespoon seedless raspberry, strawberry or blackberry preserves.
6. Fresh Dill Vinaigrette: Follow master recipe, using white wine vinegar. Add 1 tablespoon finely chopped fresh dill and 1 clove minced garlic.
7. Sherry Vinaigrette: Follow master recipe, using sherry vinegar. Add 1 clove minced garlic and 2 teaspoons dried oregano.
