DIRECTIONS

  • Marinade Allow beef to soak in marinade for 4 to 6 hours before grilling. Lightly oil grill grate and preheat to medium. Remove beef from marinade; discard marinade. Rub with oil, then season with salt and pepper. Grill tri-tip for 5 to 7 minutes per side, slathering with barbeque sauce halfway through. The meat is done when it has an internal temperature of 130ºF to 135ºF for medium rare. Let rest for 5 minutes before slicing.
  • Espresso Barbeque Sauce: In a skillet, sauté shallot and garlic in oil for 3 to 4 minutes. Add remaining ingredients (ketchup, espresso powder, Chateau St. Jean® Cabernet wine, cider vinegar, chili powder and salt) and bring to a boil. Immediately reduce to a simmer and cook for 15 to 20 minutes. Set aside until ready to grill. The barbeque sauce can be made 2 to 3 days ahead of time if needed.
  • Grilled steak pairs wonderfully with Chateau St. Jean® Cabernet and this refreshing SKYY® Gimlet… Muddle mint with simple syrup in a shaker. Shake muddled mixture with lime juice, SKYY® vodka and ice. Strain over fresh ice and garnish with fresh mint leaves.
