Stovetop Macaroni and Cheese with Butternut Squash and Chard

Stovetop Macaroni and Cheese with Butternut Squash and Chard

DIRECTIONS

  • Cook macaroni according to package directions; drain.
  • Preheat broiler.
  • Heat oil over medium heat in a very large oven-safe skillet. Add onion and chard. Cook 5 minutes, or until tender. Add squash, cooking to reduce any excess liquid. Add evaporated milk and bring to boiling. Stir in 1 ½ cups cheese, the sage, pepper and salt; cook until cheese melts. Stir in macaroni and heat through.
  • Sprinkle the remaining ½ cup of cheese and panko atop mixture. Lightly coat crumbs with nonstick cooking spray. Place under broiler 4 to 5 inches from the heat. Broil 1 to 2 minutes, or until crumbs are toasted.
