DIRECTIONS

  • Line 2 (12 count) muffin pans with 18 paper liners; place a vanilla wafer in bottom of each liner; set aside.
  • In large mixing bowl, combine Neufchâtel and sugar; using an electric mixer, beat on medium speed until light and fluffy; scraping edge of bowl. Slowly add eggs, one at a time, scraping edge of bowl between each egg.
  • Fill paper liners with mixture. Bake in a preheated 350°F oven 15 minutes. Remove from oven and place on cooling rack; cool 30 minutes.
  • Refrigerated, uncovered, until thoroughly chilled, at least 2 hours. Top with pie filling just before serving.
