Cubano Sliders with Tropical Fruit Relish
Sliders—mini burgers or sandwiches—are a perfect proposition for casual entertaining: They’re quick-and-easy to make, and everybody loves them. To keep sandwiches warm as you work in batches, place sliders on a parchment-lined baking sheet, cover loosely with foil and keep in a 200°F oven for up to 30 minutes.

DIRECTIONS
Sauté onion and sweet pepper in hot oil in a medium saucepan over medium heat for 3 to 5 minutes, or until tender. Stir in pineapple, garlic, salt and pepper. Simmer 6 to 8 minutes, or until juice releases from pineapple and cooks until nearly dry. Add vinegar, lime juice and mustard. Simmer again 3 to 5 minutes until nearly dry. Let cool.
Place ham on 16 of the dinner roll halves. Divide cheese among the other 16. Spoon about 1 tablespoon of relish atop the ham. Put halves together.
Preheat a covered indoor grill, waffle iron or panini sandwich grill. Place 2 to 4 sandwiches (depending on the size of your appliance) in the grill. Cover, pressing down for a moment to flatten the sandwiches. Grill 3 to 4 minutes, or until toasted and cheese is melted.
