Prosciutto-Wrapped Potato Poppers


This simple side dish is a real head-turner! Prosciutto—Italy’s famous artisan ham—possesses a nutty, sweet taste that is suburb with garlic, lemon, dill and potatoes. The ham, traditionally cut into thin, almost translucent slices, clings to potatoes perfectly. If you have trouble separating packaged prosciutto slices, pop the package in the freezer for 10 minutes and try again—the paper-thin product pulls apart more easily when it is really cold.

DIRECTIONS

  • Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper; set aside.
  • Combine olive oil, garlic, dill, lemon peel, salt and pepper in a large, shallow baking dish; whisk well. Add potatoes and toss gently using hands to coat potatoes evenly with olive oil mixture.
  • Roll each potato in a slice of prosciutto, wrapping entire potato snuggly with prosciutto. Press gently to adhere.
  • Arrange wrapped potatoes evenly spaced on the prepared baking sheet. Roast for 25 to 30 minutes, or until potatoes are tender when pierced with a paring knife.
