Spiced Bacon-Wrapped Scallops

Preheat oven to 350°F. Line a rimmed baking sheet with foil or parchment paper. Place bacon strips evenly spaced on the prepared baking sheet. Bake in the preheated oven for 6 to 8 minutes, or until bacon begins to brown on its edges but still remains pliable. Remove from oven; transfer bacon strips to paper towels to cool. Discard parchment paper and reline pan with fresh parchment paper.
For milder scallops, sprinkle scallops lightly on both sides with seasoning blend. For spicy, full-flavor scallops, combine Cajun seasoning and scallops in a large zip-top plastic bag. Seal bag; shake to coat scallops evenly with spice blend.
Wrap each scallop in 1 slice of the partially cooked bacon, securing it through the center with a toothpick or appetizer spear.
Preheat broiler to high setting. Broil bacon-wrapped scallops about 4 inches away from the heat for 4 to 5 minutes on each side, or until scallops are opaque and bacon is crisp.
