DIRECTIONS

  • Trim any excess fat from a boneless pork shoulder roast. Place roast in a 4- to 5-quart slow cooker. Combine reduced-sodium chicken broth, thinly sliced medium onion, packed cilantro leaves, water, cider vinegar, minced garlic, salt, ground cumin and dried oregano in a medium bowl; mix well. Pour chicken broth mixture over pork shoulder. Cover slow cooker and cook on low setting for 10 to 12 hours. Transfer pork to a cutting board and let cool slightly. Using 2 forks, shred pork and discard fat. Spoon shredded meat atop toasted buns; top with shredded Swiss cheese and sliced dill pickles. If desired, transfer remaining sauce to small ramekins for dipping.
