  • Spray a large microwave-safe mug with nonstick spray. Add veggies and microwave for 1-2 minutes, until softened. Blot any excess liquid from veggies then add eggs, stir to combine with the veggies and microwave for 1 minute. Add ham and cheese and lightly stir. Microwave for an additional 45-60 seconds or until egg is set.
