Cut boneless, skinless chicken thighs into quarters. Cut boneless, skinless chicken breasts into halves. Place chicken pieces in a 3 ½- to 4-quart slow cooker; sprinkle lightly with salt and ground black pepper. Add chopped onion, seeded and chopped red bell pepper buffalo wing sauce and ranch-flavored salad dressing mix; stir well. Cover slow cooker; cook on low setting for 8 hours. Transfer chicken to a large plate. Shred, using two forks. Return shredded chicken to sauce; mix well. Spoon chicken mixture atop toasted buns; sprinkle, if desired, with crumbled blue cheese.
