Southwest Chicken in a Slow Cooker
It’s like a burrito in a bowl! Just prepare this dish the night before and it will be ready to go when you get home from work or your family’s evening activities.

DIRECTIONS
Combine chicken broth, beans, corn, tomatoes, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the slow cooker. Season chicken breast with salt and pepper and lay on top of the mixture.
Cook on low for 10 hours or on high for 6 hours. Right before serving remove chicken, shred with a fork, return to the slow cooker and combine. Add salt and pepper to taste. Serve one cup chicken mixture over one cup cooked rice and sprinkle with toppings: shredded cheese, cilantro, crushed tortilla chips and a dollop of sour cream.
