DIRECTIONS

  • Trim any excess fat from a boneless beef chuck roast. Place roast in a 3 ½- to 4-quart slow cooker. Add chopped onions, seeded and minced jalapeños, seeded and coarsely chopped yellow bell pepper, cloves minced garlic ground cumin, dried oregano and enchilada sauce. Cover slow cooker and cook on low setting for 10 to 11 hours. Transfer meat to a cutting board and let cool slightly. While beef cools, skim fat from top of cooking juices. Using 2 forks, shred beef and discard fat. Spoon shredded beef atop toasted hoagie rolls. If desired, top with shredded Monterey Jack cheese.
