Simple Chicken Cordon Bleu for One

DIRECTIONS

  • Pound chicken breast to ¼-inch thick. Top with cheese and ham; roll up. Secure with toothpicks. Salt and pepper to taste.
  • In small skillet with lid, heat oil over medium-high heat. Add chicken and brown on all sides.
  • Add 2 tablespoons water to skillet and quickly cover with lid. Reduce heat and simmer until internal temperature of chicken reaches 170°F on an instant read thermometer.
