Yien-Koo's Scrambled Eggs With Chinese Chives

  • Heat the oil in an 8- to 10-inch, well-seasoned or nonstick skillet over a medium-high flame. Add the salt to the skillet and stir it around. Put in the chives and stir-fry them for 3 to 4 seconds. Now put in the eggs. Stir them gently 3 to 4 times in the next 5 to 10 seconds. The eggs should be very softly scrambled. Empty eggs immediately onto warm plates and serve with plain rice, Chinese style, or with toast.
