Onions Pickled In Vinegar

DIRECTIONS
Peel the onions. Cut a deep cross into them, length-wise, so that each onion is almost quartered but still stays attached at the bottom. Put the onions into the quart jar (you may have a couple left over).
Put the garlic cloves and mint into the container of a blender or food processor. Add 1/4 cup of the vinegar (or a bit more, if you need it) and blend until you have a smooth paste. Pour in the remaining vinegar and salt and blend quickly to mix.
Pour this seasoned vinegar over the onions. Cover with a nonmetallic lid and set aside for 24 hours. The pickle is now ready. It may be refrigerated.
