Baked-Stuffed Chicken Breast Boursin

DIRECTIONS
Pound each piece of chicken until thin. Put 1/4 cup of the cheese in each piece. Form a ball around the cheese and wrap each piece with plastic wrap to keep the form. Place the chicken in the freezer for 30 minutes or until slightly hard.
Coat each of the partially frozen pieces with the flour, then dip into the eggs. (This will form a paste.) Roll in the bread crumbs, coating each piece well.
Preheat oven to 350° F. In a large skillet, heat the oil and cook the chicken until brown on all sides. Remove and drain on paper towels. Place in a baking dish and bake for 20 - 30 minutes.
In a medium-sized saucepan, combine the wine, butter, tomatoes, and mushrooms and reduce by half over medium heat until thick. Stir in the chives and lemon juice and keep warm.
Divide the chicken amoung serving plates and top with the sauce. Serve immediately.
