Baked-Stuffed Chicken Breast Boursin

DIRECTIONS

  • Pound each piece of chicken until thin. Put 1/4 cup of the cheese in each piece. Form a ball around the cheese and wrap each piece with plastic wrap to keep the form. Place the chicken in the freezer for 30 minutes or until slightly hard.
  • Coat each of the partially frozen pieces with the flour, then dip into the eggs. (This will form a paste.) Roll in the bread crumbs, coating each piece well.
  • Preheat oven to 350° F. In a large skillet, heat the oil and cook the chicken until brown on all sides. Remove and drain on paper towels. Place in a baking dish and bake for 20 - 30 minutes.
  • In a medium-sized saucepan, combine the wine, butter, tomatoes, and mushrooms and reduce by half over medium heat until thick. Stir in the chives and lemon juice and keep warm.
  • Divide the chicken amoung serving plates and top with the sauce. Serve immediately.
