Sauteed Tenderloin Tips With Lemon Butter Sauce

DIRECTIONS
Slightly flatten the medallions, by pressing them lightly with the flat side of a French knife. Heat 1/4 cup of the butter in a heavy skillet. When it is hot (but not burning) add the medallions and sauté them quickly - 3 minutes on one side and 2 minutes on the other. Place tenderloins on a warm platter.
Pour off all but 1 teaspoon fat from the pan. Add the remaining 1/4 cup butter and the lemon juice. Scraping the pan, bring up all bits of the pan drippings. When the butter has melted, add the parsley and salt and pepper. Pour the sauce over the medallions, and serve immediately.
