DIRECTIONS

  • In a medium bowl, mix together the barley flour, baking powder, and cinnamon. Add the rice and the raisins or the date pieces and mix again. Add the egg and mix well. Add the milk and beat until the batter is well mixed.
  • Drop the batter, 1/4 cup at a time, onto a hot, oiled skillet and cook over medium-high heat until bubbles appear on the surface of the pancakes and the bottoms are brown. Turn over and cook the other side.
  • Serve with fresh fruit and soy or dairy yogurt, or with your favorite jam, syrup, or honey.
