DIRECTIONS

  • In a medium bowl, mix together the flour, baking powder, and cinnamon. Add the egg and mix well. Add the soymilk and beat for a few seconds until smooth. Add the raisins and sunflower seeds and mix again.
  • Drop the batter, 1/4 cup at a time, onto a hot, oiled skillet and cook over medium heat until bubbles appear on the surface of the pancakes and the bottoms are brown. Turn the pancakes over and cook the other side.
  • Serve with fresh fruit, fruit-sweetened jams, or your choice of honey or syrup.
