  • Make the pizza crust. While the dough rises, prepare the topping. Press the garlic into a medium bowl. Add the salt, herbs, and oil. Add the artichoke hearts and mix well.
  • Cut the tomatoes into slices 1/4 - 1/2 inch thick. Select 12 nice, big slices and set aside. Reserve the small slices from the ends to use in a soup, sauce, or stew.
  • After the dough for the crust has risen, place it in the middle of a well-oiled 11-x-16-inch cookie sheet. Stretch and pat the dough until it covers the bottom and sides of the sheet. If the sheet has no sides, build up the edges a little thicker. Distribute the artichoke mixture evenly over the crust Arrange the tomato slices in one layer over the artichoke mixture. Top with the grated cheese.
  • Bake at 375°F for 15 minutes or until the crust is a crispy golden brown (lift the edge of the pizza to check).
  • To serve, cut the pizza into squares, one tomato slice per piece. Serve hot.
