DIRECTIONS

  • Bring a large pot of water to boil for the spaghetti.
  • Meanwhile, place the frozen peas in a colander and set aside.
  • Finely chop the tomatoes, saving the juice and transferring it to a medium bowl along with the tomatoes.
  • When the water boils, cook the spaghetti al dente, then drain it through the colander over the peas. Immediately return the pasta and peas to the pot in which you cooked the pasta and add the finely chopped tomatoes with their juice and the chopped herbs. Press the garlic into the mixture and add the tamari. Toss well and serve immediately. Top with Parmesan cheese or tofu-Parmesan, if desired.
