DIRECTIONS

  • Place pears and water in a saucepan. Cover and simmer for 1/2 hour. Purée.
  • Place apricots and water in a saucepan. Cover and simmer 1/2 hour. Chop.
  • Combine flour and salt.
  • Rub the oil into the flour by hand.
  • Add the pear purée, chopped apricots, walnuts, vanilla, and orange rind to the flour mixture. Add enough orange juice to make a moist batter.
  • Pour into an oiled 9 x 5 inch pan. Bake 1-1/2 hours, or until done, at 300°.
  • Will keep well in refrigerator. Freezes well. Wrap in foil or plastic wrap.
