Beer-Boiled Shrimp

A winter alternative for shrimp lovers everywhere
Brewed shrimp may sound crazy, but once you try these beer-boiled crustaceans you may never prepare them any other way again.
The method is simple: Cook shrimp in beer instead of water, add a dash of seasoning, and you get a quick and tremendously flavorful dish.
The Basics
Pick a brew of your choice, keeping in mind that a lighter beer (such as a pale lager) will provide a more subtle taste while a darker beer (like porter) will give you a more robust flavor. Plan for about two bottles of beer for each pound of cleaned and deveined shrimp. Also, don’t remove the tails—you’ll need something to hold on to for dipping!
Here’s what to do…
To Make Beer-Boiled Shrimp
Pour two bottles of beer and desired seasonings into a medium saucepan and bring to a boil. (Beer boils over quickly, so be watchful.) Add 1 pound of shrimp and return to a boil. Once the shrimp have changed color and are firm, they’re done. For medium shrimp, plan on 2-4 minutes from the time they’re dropped into the pan. Do not overcook, or they’ll get rubbery. Drain and serve warm or chilled. Serves 4.
Seasonal Twists
Superbowl Special: Sam Adams Winter Lager, a dollop of butter, and a splash of Mrs. Dash Southwest Chipotle for the brew. Horseradish and a pinch of Mrs. Dash Southwest Chipotle seasoning in the cocktail sauce add a great smoky flavor.
Summer Fiesta: Use Corona Beer and the juice of 1 fresh lime. Add a few tablespoons of chopped fresh cilantro. Cook and drain as directed. Add some lime, cilantro and horseradish to the cocktail sauce of your choice for added flavor.
Fall, New England Style: Pumpkin beer with a few tablespoons of Old Bay seasoning. Keep the cocktail sauce simple—just add horseradish and a dash of Old Bay.
All these recipes can be adjusted for heat factor, but be sure to make plenty since they’ll likely be a party favorite!
