Give frozen snacks a quick homemade twist
Whether it's unexpected guests or relatives you’re trying to impress, keep these basics on hand to make the perfect starters.
Want a fabulous yet simple hors d'oeuvre? Start with waffle fries and add a personal touch. Arrange the baked fries on a platter and garnish each with a small dollop of sour cream, a crumble of bacon, and a sprinkle of chives. For variety, replace bacon with a dab of salsa. Either way you get a great appetizer with short prep time. (Wine tip: Pair with a Pinot Noir.)
Chicken and Cheese Taquitos are terrific served with a warm bean dip. For an easy and delicious dipping sauce, combine 1 16-ounce can refried beans (vegetarian if desired), 1 8-ounce package shredded Monterey Jack cheese, and ½ cup mild chunky salsa in a saucepan on medium heat for approximately 5 minutes. Trim taquitos, cut them in half, and arrange on a platter with the warm refried bean sauce in a bowl for dipping. (Wine tip: Pair with a Riesling.)
Looking for a perfect, quick and delicious first course? Try crab cakes. While they’re heating, whip up a fancy tartar sauce by combining ½ cup mayonnaise, 2 tablespoons sweet pickle relish, 1 tablespoon drained capers, 3 quick splashes of hot sauce, salt and pepper to taste. Serve the crab cake on a leaf of green lettuce with a spoonful of sauce on top. Add a few extra capers for garnish and—voilà!—you’re good to go! (Wine tip: Pair with a Chardonnay.)
