Leftover Madness

Replay the turkey and trimmings

From the moment they push themselves away from the holiday table, filled to the brim with turkey, stuffing, sweet potatoes and cranberry sauce, people often vow that none of it will cross their lips again for at least 364 days.

But wasting good food is, well, a waste, especially since leftovers often have even better flavor a day or two later, as the ingredients have had time to blend. Even a cup of this and a ½ cup of that can be a tasty part of tomorrow’s lunch or dinner.

Make sure you quickly cover and refrigerate all the leftovers so they don’t spoil, and take inventory of what’s left so you can create dishes that can be eaten soon or frozen for later.
