The Life of the Produce Party: Beets and Clementines

Stealing hearts at your holiday festivities, one dish at a time
An unlikely combination at first glance, beets and clementines are actually a natural twosome for many reasons. First, they’re in season at just the right time: late fall through winter. Second, they both come to the table with plenty of nutrients—beets contain antioxidants, folate, vitamins A and C, and fiber; clementines are rich in fiber and vitamin C. Third, their color and flavor make them the natural life of the party.
Eaten raw, beets work best grated into salads and slaws. Most people prefer beets roasted or steamed, but heat will reduce their nutrient content. Keep cooking time to a minimum—no more than an hour for roasting or 10-15 minutes steamed.
The sweetness and texture of beets paired with the luscious citrus flavor of clementines makes for a deeply flavorful salad that’s perfect for all winter occasions.
