Vary the bread, using whole wheat or rye instead of white. Celery and onions are favorite flavor and texture enhancers. Nuts, bacon, sausage, roasted garlic, fruit, even blue cheese supply added interest. Season with sage and thyme but also consider parsley, rosemary, cinnamon or soy sauce.
No matter the variation, stuffing must complement the turkey and gravy. Use a light hand with crunchy textures and bold seasonings.
