Five Reasons Why You Should be Eating Chocolate

Give chocolate a cape and let it come to your rescue! The secret is cacao, the bean that gives chocolate it’s healthy powers. (It’s a plant, after all). The most healthful way to eat chocolate is as dark as possible – 70% cacao or greater. Here’s the powers that make chocolate a superhero and why YOU should be eating it:

1.) Antioxidant power: cocoa is filled with those good guys that disarm free radicals & fight aging in the body called antioxidants. It’s   a plant, after all:)

2.) Feel-good power: chocolate achieves this by boosting endorphins (those feel-good hormones), and it may also boost serotonin, giving a calming effect.

3.) Brain power: cocoa is rich in flavanols which boost blood flow to parts of the brain and may improve performance and alertness.

4.) Stress-busting power: this superfood may have the power to bust some of the negative metabolic effects of stress, particularly cortisol.

5.) Heart power: some studies show that a square of dark chocolate a day may lower blood pressure and may reduce risk of heart attack or stroke by as much as 39%.

Cherry Almond Dark Chocolate Bark 
An easy recipe that will give you a quick chocolate-fix with zero guilt involved! My kids love a small chunk of this as an after dinner snack. Delicious stored in the refrigerator.

10 ounces dark chocolate chips (60 – 70% cocao)
1/4 cup dried cherries, roughly chopped
3/4 cup chopped whole almonds
dried unsweetened coconut
sprinkles (optional)

  • Roughly chop almonds and spread them out on a baking sheet. Bake at 375 degrees F until toasted. This gives them a delicious flavor!
  • Melt the chocolate in the microwave, one minute at a time, stirring after each minute, until chocolate is completely melted. Stir in cherries & almonds.
  • Spread mixture onto a flat surface lined with parchment paper or a silpat. Sprinkle with dried coconut and Valentine sprinkles if desired. Let harden. Or, put in the freezer for 10 – 15 minutes until done.
  • Break into pieces and serve or store in an airtight container. Fall in love with dark chocolate!
