3 Ways to Turn Spaghetti Squash Into a New Favorite

To me, squash can at first seem intimidating. They are rather awkward, lumpy, and sometimes cutting them can seem like the fall equivalent of cutting a watermelon. But, if you can make it through that, you’ll find treasures of deliciousness inside. I use to always eat spaghetti squash with a dab of butter spread or coconut oil, a sprinkle of sea salt, a bit of freshly grated Parmesan and mmmmmm. Really good. That made for a great lunch at work, because I would halve the squash, remove seeds, cover it with plastic wrap, and microwave for 5 – 8 minutes. Simple and comes in it’s own bowl….no clean up. 

These days I am addicted to creating “Spaghetti Squash Bowls”…and here are my family’s top three favorites. These are all three done by roasting the squash, which brings out a sweet quality to it.  They could be served individually, in their nature-given bowl, mixed together as a side dish, or even as a main (I’d add some grilled chicken or seared flank steak to the top).  Just FYI, my children’s favorite is the Lasagna Bowl Spaghetti Squash….but I’m SURE that does not have anything to do with the layers of cheese;) 

To cut, I like to first slice the end off so it has “legs” to stand on. It is more effective to cut when it’s not rolling everywhere!  Then, slice down the middle (good news: once you get to the middle, slicing is super-simple). Scoop and seeds, drizzle with olive oil, salt and fresh pepper, and your spaghetti squash is ready to be roasted – cut side down or cut side up…you choose.

    Hi! I just want to thank you for this awesome recipe and the cute way of using the outside as a bowl!

    I am not much of a cook, but my friends love to come over to my place to have what simple thing I can cook up.

    My good friend’s birthday is coming up and she requested that I cook for her. This is going to be a great entrée for her birthday celebration! Thank you!
