Make your own Muffin in a Mug
A muffin? In a mug? Yes! Super simple, easy to make and a fun treat for kids to make when just learning to cook. Enjoy!
Total cook time
- 3 1/2 tablespoons whole wheat flour
- 1 1/2 tablespoons unbleached white flour
- 1 tablespoon brown sugar (firmly packed (granulated sugar can be substituted))
- 1/2 teaspoon baking powder
- Pinch salt
- Big pinch ground cinnamon
- 2 tablespoons egg substitute (egg white, or beaten egg)
- 2 1/2 tablespoons milk (whatever type you have in the refrigerator)
- 2 teaspoons canola oil
- 1 tablespoon Greek plain or vanilla yogurt
- 1 tablespoon nuts of choice
- 1 tablespoon fresh fruit (chopped (if using blueberries, no need to chop) or 1 heaping teaspoon dried fruit (chop if using larger dried fruit))
- 1 heaping teaspoon flaked or shredded coconut
- 1 heaping teaspoon mini semi-sweet chocolate chips
- Heaping teaspoon jam or jelly, light cream cheese, applesauce, apple butter, or pumpkin butter (dropped into the center of the batter just before microwaving)
Coat the inside of a microwave-safe plastic soup or coffee mug with canola cooking spray.
Add dry ingredients to the mug and blend with a mini scraper or teaspoon. Add wet ingredients and blend well, scraping sides and bottom of mug, with mini scraper or spoon.
Gently stir in any optional ingredients and if choosing to add jam or a nut butter, drop a heaping teaspoon into the center of the batter in the mug.
Microwave 60 seconds and then test for doneness. (Insert a cake tester or fork into the center and if it comes out clean, it is done!) If not done, microwave an additional 15 seconds and check if it is fully cooked.
All recipe ingredients should be cooked to a safe internal temperature according to USDA guidelines. After preparing a recipe, please store any leftovers in the refrigerator.
