Pineapple Mint Shrimp Kabobs

  • 1 cup diced fresh pineapple
  • 1/4 cup loose O Organics® fresh mint
  • 2 cloves garlic
  • 2/3 cup O Organics® olive oil
  • 1/4 cup Rice Vinegar
  • 3 tablespoon lime juice
  • 3 tablespoon O Organics® Soy Sauce


  • 2 pounds Open Nature® shrimp
  • 1 red bell pepper cut into 1 square inch slices
  • 1 orange bell pepper cut into 1 square inch slices
  • 1 red onion cut into 1 square inch slices
  • 2 cups pineapple chunks
  • salt and pepper to taste

Cooking Instructions

Step 1

Make your marinade by combining all marinade ingredients into a food processor or blender. Pulse until smooth. Divide the marinade in half, reserving some for serving. Set aside.

Step 2

Prepare your skewers by threading the shrimp and veggies in any order you like. You can also do skewers with all shrimp, and some with all veggies.

Step 3

Place the skewers in a large container or bag, and pour 1/2 of the marinade on the prepared skewers.

Step 4

Marinade for as little as 15 minutes, or as long as 1 hour.

Step 5

Prepare your grill. Heat to a medium high heat, or 450 degrees.

Step 6

Once heated, place skewers on the grill and cook for 3-4 minutes per side. Remove from heat.

Step 7

Let cool for a few minutes before serving. Pour the reserved marinade over the shrimp and serve. Salt and pepper to taste
