Sweet Potato Pie Smoothie
A pie like smoothie with a healthy twist! Sweet potatoes are super nutritious and contain nutrients with known and powerful anti-oxidant and anti-inflammatory properties, and they help regulate blood sugar levels.
Total cook time
- 1 cup baked sweet potato pulp
- 1/2 teaspoon ground cinnamon
- 1 frozen ripe banana
- 6 ounces almond milk
- 1/4 cup whole oats
- 1 tablespoon pecans
- 2 teaspoons pure maple syrup
- 1/16 teaspoon kosher salt (if desired)
Place oats and pecans on a baking sheet. Drizzle maple syrup over them. Bake in the oven at 400º until toasted, about 5 minutes.
In a blender, add all ingredients: sweet potato, cinnamon, banana, cashew milk, and the toasted oat and pecan mixture. To bring out the flavors, add a pinch of salt. Blend on high until smooth and creamy. Add ice if desired (or a little more cashew milk), and blend.
Pour and enjoy!
