Directions For larger cuts of pork, such as roasts, cook to 150 degrees F; remove from the heat and allow to set for 10 minutes. The temperature of the roast will continue to rise to 160 degrees F. Method: Roasting: Roast in an uncovered, shallow pan at 350 degrees F unless otherwise specified. Thickness/Weight: 2-5 lbs. Final Internal Temperature: 160 degrees F. Cook: 20 minutes per lb.
