Shiitake Mushroom (Lentinus edoles) is often called a wild mushroom, however it is only found cultivated. The origin of this mushroom is debated, either the Chinese or the Japanese were the first to cultivate Shiitake over 1200 years ago. Available fresh in nearly all US markets, there is also a very large demand for the form. The price of reconstituted dry can often be 10-15% of the cost of fresh Shiitake and presented in a dish they are indistinguishable. Suggested Uses: Shiitake Mushrooms have a light and delicate flavor and can be prepared in many ways. Delicious breaded and fried or added to vegetable and Oriental soups. Chop and mix with bread crumbs for a savory stuffing for grilled vegetables. Add some Shiitake to your next stir fry recipe. A recipe suggestion is located on the reverse side of this card.

Directions
Store: Store in a cool, dark place. Shelf life is 6 to 12 months, or can be extended by freezing. Reconstitution: To reconstitute, blanch in boiling water for 2-5 minutes, or soak for 30 minutes in warm water. 1 ounce of reconstituted mushrooms equals 4 ounces of fresh Shiitake Mushrooms.
