Directions All You Need: 3 cups water; 1 can (6 oz.) tomato paste; 1 lb. ground beef, turkey or chicken; 2 cups shredded Cheddar cheese, divided; 8 corn tortillas; 1 pkg. Lawry's Enchilada Sauce Spices & Seasonings. Mix Makes 8 Enchiladas. Mix water, tomato paste and spices & seasonings mix in saucepan until blended. Bring to boil on medium heat. Reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally. Brown ground beef in skillet on medium-high heat. Drain fat. Stir in 1 cup of the cheese. Pour 1 cup of the enchilada sauce into 13 x 9-inch baking dish. Coat each tortilla in remaining sauce. Spoon beef mixture down center of each tortilla; fold over sides. Place seam-side down in baking dish. Spoon remaining sauce over top. Sprinkle with remaining cheese. Bake in preheated 350 degrees F oven 15 minutes. Bonus Tip: Chicken Enchiladas: Prepare as directed, using 2-1/2 cups shredded cooked chicken in place of the ground beef.
