Today, as then, we fillet and brine our salmon by hand, and smoke using native alder wood. Each smoked salmon is vacuum sealed in our famous creation, The Gold Seal Pouch, and gently cooked in its own juices, with nothing else added. This preserves the salmon naturally, so no refrigeration is required until opened.
