Directions You Will Need: 1/2 lb. bacon, diced; 2-1/2 cups peeled, diced potatoes (about 6 medium); 1 carton (32 oz.); Swanson Chicken Broth; 1-1/2 cups water; 1 pouch Swanson Homemade Soup Maker; 1 cup heavy cream; 1/2 - 1 tsp. salt (optional). To Prepare - (Soup Mix Must Be Cooked for Food Safety): Step 1: Cook the bacon in a 4-qt. saucepan over medium heat until crisp. Pour off fat, drain the bacon and crumble. Return half the bacon to the saucepan and reserve the rest for garnish. Step 2: Add the diced potatoes, broth, water, soup mix and seasoning packet to the saucepan and heat to a boil. Reduce the heat to low, cover and simmer until the potatoes are tender, about 30 min. Stir in the cream and cook until hot but take care not to boil. Season with the salt. Top with the reserved bacon and, If desired, cheese and green onion or chives. Recommended use by date on container. Discard unused portion of mix. Follow cooking instructions on package. Store in a cool dry place.
